Made from 92% Cabernet and 8% Malbec, the grapes for the 2005 Antis are sourced in Finca Las Compuertas and Finca Perdriel in Luján de Cuyo, Mendoza at 1050 meters above sea level. Harvesting is by hand from 60-90 year old vines before chilled maceration in steel vats for 21 days. Alcoholic fermentation is carried out at 27 degrees Centigrade (81 F) in stainless tanks using native yeasts. Malolactic fermentation is pursued to completion, then 30% of the wine is matured in new French oak barrel to enhance the structure and complexity without overpowering the fruit. Prior to release, the wine is then matured in bottle for a minimum of 3 months before shipping. “Intense ruby-purple with ripe black fruit aromas and flavors. Full-bodied with black plum, hints of cocoa, spice, and leather on the palate with a finish that show the deliciously supple tannins. Drink with red meats, pastas with meat sauce, and sharp cheeses.
